In a previous recipe (see February 24, 2017), I mentioned my youthful fondness for cream cheese and jelly sandwiches. A more mature pairing with cream cheese is this little speckled gem – cream cheese with pimento stuffed olives.
You can find cream cheese and olive spread in most bagel shops, or at least you can here in the New York metro, but making it at home is quick, easy and substantially less expensive. All you need is some cream cheese,* a jar of green pimento stuffed olives and a knife.
I know it’s tough to get a good bagel outside of New York so feel free to use whatever is good by you. By the way.. that’s a big old Bialy down there.. in case you were wondering.
Need This
1 – 8 ounce package of real cream cheese – not whipped (store brand is fine)
About 1/4 cup of pimento stuffed green olives – course chopped
Bagels, bialys, dark pumpernickel, B&M Brown Bread – or any other favorites
Do This
Unwrap the cream cheese and put it in a microwave safe bowl. Microwave for 15 seconds to soften it up a little.
Add the chopped green olives to the softened cream cheese and mix very thoroughly.
Put the spread into a plastic container with a sealed lid and refrigerate for at least one hour.
Remove the spread about 10 minutes before serving.
Schmear it all over your favorite bread thing and enjoy.
Serves 4. My cost approx. 1.75 total (sans bread) – about 45 cents per serving.
*Use real cream cheese for this, not that Newfuggle Cheese stuff. GMN
