Beach Plum Jam & Bacon Sandwiches

Wellfleet Massachusetts is a tiny fishing village on outer Cape Cod with a small downtown area “thickly settled” with artists and quaint shops of one kind or another.  My wife and I (and her dog) honeymooned here many, many, moons ago.  We would return often over the years, first just the two of us, then with kids and dogs and dogs and kids and family and friends – then just the two of us again.

No matter where you stand in Wellfleet you are never much more than a mile from either the Atlantic ocean or Cape Cod bay.  The sandy land that lies between is home to fresh-water ponds with names like Great Pond, Long Pond, Northeast Pond (where wild blueberries grow), Spectacle Pond, Turtle Pond, and my favorite, Dyer Pond, a serene, out-of-the-way place where the sound of the world gets muted somehow and where you’re sure that if you could only stay there forever you would never need red wine again.

On the ocean side grows beach plums which can be made into a tart jam – one of 3 ingredients in this recipe.  If you cannot get beach plum jam, cranberry sauce (whole berry) is an excellent substitute.

Need This

12 strips of bacon
1 jar of beach plum jam (or 1 can of whole cranberry sauce)
8 slices of white bread.

Do This

Toast the bread slices in a toaster until golden

Fry the bacon until very crisp.

Put a thick schmear of jam on one slice of toast and 3 strips of bacon on another slice. Put the two slices together then cut the sandwich in half diagonally.  Do the same for the remaining slices. Serve immediately.

Serves 4.  My Cost Approx:  $ 6.25 total – about $ 1.55 per sandwich.
