Lean Eggs & Spam

      

Okay, quit making that face.. this is povertystew.com.. remember?  And
besides, I happen to like Spam.  I think we think we’re too good for Spam anymore here on the mainland U.S.A.  But not so in Hawaii.
Spam is a daily feature at breakfast tables all over those islands.  Last count there were close to 1.5 million people living in Hawaii.  They can’t all be wrong.  Oh, and by the way, who was the dex who decided to call unwanted email – spam?  That aint right.

In this recipe you’ll want to give the Spam a good fry so that it’s heated all the way through, bordering on crunchy. Both the Spam and the potatoes* are fried in butter, but not the eggs. The Spam and butter will provide enough fat, so the eggs should either be poached or fried in a non-stick frying pan so that the eggs are.. lean.

We recommend using Spam Lite for this recipe, it’s half the fat and a little less salty than the original, but it’s up to you.

Need This
1 – 12 ounce can of Spam (preferably Spam Lite)

2 – 15 ounce cans of No-Salt-Added sliced white potatoes*
8 Eggs
2 tablespoons of butter

Paprika
1 teaspoon of dried thyme leaves
Garlic powder

Salt
Ground black pepper

Do This
Remove the Spam from the can in one piece. Slice off 1/4 inch slices, lengthwise. If you slice it evenly you should get 8 slices.

Melt one tablespoon of butter in a frying pan. Add the Spam slices to the pan and fry over medium heat until well browned (about 3 – 4 minutes each side).

Drain the two cans of sliced potatoes into a colander and rinse off the starch with clean cold water. In another frying pan, melt the other tablespoon of butter then add the sliced potatoes. Dust the potatoes with a light coating of Paprika so that all the slices are a little red in color. Shake some garlic powder over it and add the thyme leaves. Fry the potatoes over medium heat, stirring frequently, until they are a nice golden color (about 15 minutes).  Add salt and ground black pepper to taste.

Poach or fry (over easy) the eggs.

Warm up the Spam for a minute if need be then plate the Spam first, then the fried potatoes over the Spam, the eggs on top.  ‘Ono.

Serves 4.  My Cost Approx. $ 6.18 total – about $ 1.55 per serving.

*You can trick out this recipe into an authentic Hawaiian breakfast by swapping out the potatoes for white rice.   GMN
